1 T yeast
1 ½ cup warm water
1 tsp salt
1 T sugar
1/2 c pumpkin puree 
3 ½ to 4 1/2 cups flour 
1/2 c sugar
1-2 T cinnamon
Combine 1/2 cup sugar and cinnamon in a small bowl and set aside. 
Dissolve yeast in warm water in a large bowl. Stir in the salt, 1 T sugar 
and two cups flour. Add pumpkin. Beat till smooth. Stir in enough of the remaining 
flour to make the dough easy to handle. Shape. Then brush lightly with 1
 T water and 1 egg white that has been whipped with a fork
 and sprinkle with Cinnamon sugar mixture. Bake on a greased cookie sheet at 425* 
for 15-20 minutes.
*We dipped ours in 
cream cheese frosting but I think that 
caramel frosting would be amazing too!
