Kaiser Rolls

I found this recipe at Taste of Home and my family loves it when I make homemade buns for our pulled pork sandwiches. Tonight I made Balsamic Honey Pulled Pork Sliders from Six Sisters' Stuff so I figured I should make these again and get them posted this time.



2 T yeast
2 cups warm water
4 T Sugar
1 T salt
1/3 c butter or margarine, melted
6 - 6 1/2 cups flour
1 egg white
2 T cold water
Dehydrated onions, poppy seeds or sesame seeds

In the bowl of your stand mixer, or in a large bowl, mix yeast with 1/2 c warm water and 1 T of the sugar. Let stand until bubbly (3-5 minutes). Add the butter, salt, the other 1 1/2 cups water and the other 3 T sugar. Mix well. Start adding flour one cup at a time on speed 2 (or by hand). When dough is well combined let the mixer (or your hands) knead the dough 2-3 minutes longer. Place in a greased bowl and cover with towel. Let dough raise for 1 hour.

Punch dough down. Turn onto a lightly floured surface; divide into 16 pieces. Shape each into a ball. Place 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes.

Beat egg white and cold water; brush over rolls. Sprinkle with topping of your choice. Cut a slit into the top of each roll. Bake at 400* for 17-20 minutes

Bake at 400° for 15-20 minutes or until golden brown.

Broccoli Chicken & Cheese Braid

Tonight I combined two of my previous recipes to create a new one. I used the bread from the Yummy Sandwich Braid post and the filling from the Chicken & Broccoli Bake post.





Ingredients:
Filling -
4 chicken breast halves, cooked and shredded
2 pounds fresh broccoli, Cut up and steamed
2 cans cream of chicken soup
1 c. milk
1 c. sour cream (can sub. mayo)
2. c grated cheese
2 T lemon juice

Bread-
1 T shortening
2 T sugar
1 T salt
1 C boiling water
1 C cold water
1/3 C lukewarm water
1 T yeast
5-6 C flour
1 egg
Rosemary (optional)

1. To make the dough dissolve 1 T yeast in 1/3 C lukewarm water.
2. In the bottom of your mixer smash the sugar, salt and shortening together with a fork until well combined.
3. Pour the boiling water over the sugar mixture.
4. Pour the cold water over the sugar mixture.
5. Pour the yeast/water mixture over the sugar mixture.
6. Add the flour 1 C at a time while mixing. You know you have enough flour when the dough pulls away from the side of the bowl.
7. Once you have enough flour mix on high for 7-8 minutes.
8. Let the dough rest for about 2 minutes in the bowl.
9. Divide the dough into two equal parts and let them rest on a cookie sheet sprayed with cooking spray for about 5 minutes.
10. Knead rosemary or other herbs into your dough if you wish.
11. Spray some cooking spray onto your counter. Roll the dough out into 2 large rectangles. Using a pizza cutter, cut 11-12 one inch wide strips along both long sides of the rectangle. Be sure to leave about 5 inches down the center uncut. You want to leave room for your
12.Combine the soup, sour cream, lemon juice and milk in a large bowl and mix well. Stir in cheese and set aside.
13. Place half of the shredded chicken in the center of first rectangle. Repeat on second braid.
14. Place half of the broccoli on top of the chicken. Repeat on second braid.
15. Pour half of the sauce down the center of the bread on top of the chicken and broccoli. Repeat on second braid.
16. Braid each rectangle and baste with beaten egg.
Sprinkle with rosemary or other herbs/spices if you wish.
Place the sandwich loaf on a large cookie sheet sprayed with cooking spray.
17. Let the dough rise in a warm oven (I turn mine to 170 degrees) for about 20 minutes.
18. Turn your oven up to 400 degrees and bake for about 15 minutes. (Leave the dough inside while the temperature rises)
19. When the loaves are golden brown on top turn the oven down to 350, switch the pan on the bottom rack to the top and vice versa.
Bake for another 5 minutes.
20. Let the loaves rest for about 5 minutes, then cut and enjoy!

One Hour Bread

Seriously people! This bread is so yummy and very quick to make. I wanted bread tonight, but it was too late in the day to get it done in time for dinner using the two rise method. So I thought I'd try something new. Let's just say it worked!


Yield 2 loaves

Ingredients:

5- 5 1/2 cups flour
1 t salt
1/3 c brown sugar
2 T instant yeast
1/3 c butter, melted
2 c very warm water
1/3 c instant dry milk

Combine all dry ingredients, including yeast, in kitchenaid stand mixer bowl with hook attachment. Mix thoroughly. Add melted butter and start mixing on speed 1. Add water and instant dry milk and change to speed 2. Mix until all is combined and continue kneading for around 5 minutes. Split into to loaves. Grease bread pans and shape dough into two loaves. Place loaves in pans and cover. Let dough rise for 25-30 minutes. It should look like this when it is ready to go into the oven.


Bake at 350* for 30-32 minutes. Try not to eat an entire loaf by yourself. Give one to a friend so you don't eat both loaves.

Balsamic Pulled Pork Sandwiches on Rye

I made balsamic pulled pork a few days back. I had leftovers. I didn't want to eat them just plain so I decided I'd try and turn it into a sandwich. BEST IDEA EVER! I threw it on some toasted dark rye bread with white cheddar. Amazing!

Onion Bagels

This is just the few changes made to make the cinnamon bagels into onion bagels.
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 1 1/2 teaspoons salt
  • 2 tablespoons white sugar
  • 1-2 Tablespoons dehydrated onions
  • 3 cups bread flour
  • 2 1/4 teaspoons active dry yeast
  • 3 quarts boiling water
  • 3 tablespoons white sugar
  • 1 tablespoon cornmeal
  • 1 egg white

  1. Place water, salt, sugar, cinnamon sugar, honey, flour and yeast in the bread machine pan in the order recommended by the manufacturer. Select Dough setting.
  2. When cycle is complete, (or after all ingredients are kneaded together) let dough rest on a lightly floured surface (I let it sit about an hour because I didn't do a full cycle). Meanwhile, in a large pot bring 3 quarts of water to a boil. Stir in 3 tablespoons of sugar.
  3. Cut dough into 7 equal pieces, and roll each piece into a small ball. Flatten balls. Poke a hole in the middle of each with your thumb. Twirl the dough on your finger or thumb to enlarge the hole, and to even out the dough around the hole. Cover bagels with a clean cloth, and let rest for 20 minutes.
  4. Sprinkle an ungreased baking sheet with cornmeal. Carefully transfer bagels to boiling water. Boil for 1 minute, turning half way through. Drain briefly on clean towel. Arrange boiled bagels on baking sheet. Glaze tops with egg white, and sprinkle with more dehydrated onions.
  5. Bake in a preheated 375 degree F (190 degrees C) oven for 20 to 25 minutes, until well browned.

Yummy Sandwich Braid

I found a recipe for this braided sandwich on Jamie Cooks It Up! and remembered I had seen a recipe for a yummy sauce on The Girl Who Ate Everything and decided to combine them. This turned out fabulous and everyone (including me - the sandwich hater - LOVED it!)

Braided Sandwich Loaf
Time: about 1 hour 20 minutes
Yield: 2 large sandwich loaves

Dough:1 T shortening
2 T sugar
1 T salt
1 C boiling water
1 C cold water
1/3 C lukewarm water
1 T yeast
5-6 C flour
1 egg
Filling:
16 slices deli ham or turkey
8 slices Swiss or provolone cheese
Topping:
***any of the following***
Poppy Seeds
Sesame Seeds
Montreal Steak Seasoning
Dried Onions
Cheese
1. To make the dough dissolve 1 T yeast in 1/3 C lukewarm water.
2. In the bottom of your mixer smash the sugar, salt and shortening together with a fork until well combined.
3. Pour the boiling water over the sugar mixture.
4. Pour the cold water over the sugar mixture.
5. Pour the yeast/water mixture over the sugar mixture.
6. Add the flour 1 C at a time while mixing. You know you have enough flour when the dough pulls away from the side of the bowl.
7. Once you have enough flour mix on high for 7-8 minutes.
8. Let the dough rest for about 2 minutes in the bowl.
9. Divide the dough into two equal parts and let them rest on a cookie sheet sprayed with cooking spray for about 5 minutes.
10. Spray some cooking spray onto your counter. Roll the dough out into a large rectangle. Using a pizza cutter, cut 11-12 one inch wide strips along both long sides of the rectangle. Be sure to leave about 5 inches down the center uncut. You want to leave room for your deli treasures. Place meat and cheese down the center of the dough.
11. Over lap the dough strips in the center over the top of your fillings.
12. Beat the egg with a fork until frothy. Brush the egg all over the loaf. Sprinkle desired seasonings on top. **You can baste the poppy seed sauce onto the sandwich at either this point OR after baking. I have done it both ways and like it both ways** See recipe at the bottom of this post.
13. Place the sandwich loaf on a large cookie sheet sprayed with cooking spray.
14. Repeat these steps with the other piece of dough.
15. Let the dough rise in a warm oven (I turn mine to 170 degrees) for about 20 minutes.
16. Turn your oven up to 400 degrees and bake for about 15 minutes. (Leave the dough inside while the temperature rises)
17. When the loaves are golden brown on top turn the oven down to 350, switch the pan on the bottom rack to the top and vice versa.

18. Let the loaves rest for about 5 minutes, then cut and enjoy!

Poppy seed Sauce
1 T poppy seeds
1 1/2 T yellow mustard
1 stick butter, melted
1 T minced onion
1/2 tsp. Worcestershire sauce
