Chirstmas Morning Casserole

What you'll need:
8-10 slices white bread, cubed & crust trimmed off
2 c. grated cheese
1 lb western sausage, browned
8 eggs
2 1/4 c. milk
1 t. dry mustard
1/2 c. milk
1 can cream of mushroom soup
1 bunch green onions, sliced

Spray 9x13 pan. Arrange bread to cover the bottom of the pan. layer sausage over bread and cover with cheese & green onions. In a bowl, mix eggs, 2 1/4 c. milk, and mustard. Pour over all ingredients in pan and chill over night. When ready to bake mix remaining 1/2 c. milk with soup and pour over casserole. Bake at 350* for 1 hour.

Crockpot Chicken w/Rice Dinner

What you'll need:
3-4 boneless, skinless chicken breasts
1-2 packets Italian Dressing seasoning
2 cans cream of chicken soup
2 packages cream cheese, softened
1 bag frozen peas or corn
Rice, cooked

Place chicken breasts in crockpot with Italian packets. Cook on high 2 hours or low 4-5 hours. Mix soup and cream cheese and place in crockpot with chicken. Mix in bag of veggies. Cook on high 1 hour. Serve over rice.

Broccoli Salad

2-3 pounds of broccoli, trimmed and chopped bite size
1 bag craisins
1/2 red onion, sliced thin
1/2 c. sunflower seeds
1/2 - 1 lb bacon, friend crispy and crumbled
1/2 lb cheese, grated fine (optional)
Mix all together in large serving bowl.

Dressing:
1 1/2 c. mayo
1/2 c. sugar
1/4 c. cider vinegar
Mix all together. Pour over salad and toss.

7 Layer Dip

What you'll need:
1 lb ground beef
1 large can refried beans
1 container sour cream
1 container guacamole - NOT Avocado dip!
1 container slasa
1 can sliced olives
1 bunch green onions, sliced
1/2 - 1 lb chesse, grated

Brown ground beef. Add refried beans to pan and cook til warm. Spread mixture into the bottom of a 9x13 pan or serving dish of your choice. Next spread sour cream followed by guacamole (you can also mix these together before spreading if you wish). Pour salsa over the top. Next spinkle the cheese over the salsa and toss olives & green onions over the cheese. Serve with tortilla chips.
(To reheat place 9x13 on stove burner on low heat to heat just the bottom layer.)

Super Easy Spinach Feta Salad

What you'll need:
1 bag spinach
1 pound strawberries, sliced
1/2 c. sugared almonds
1 container feta cheese
1 bunch green onions, sliced (optional)
1 bottle Brianna's poppy seed dressing

Place spinach in a large serving bowl. Top with strawberries, almonds, green onions and Feta. Serve with poppy seed dressing.

Spinach Salad

What you'll need:
1 head of iceberg lettuce, chopped
1 bag spinach, rinsed & drained
1/2 pound fresh mushrooms, sliced (optional)
3/4 - 1 pound Swiss cheese, grated
1/2 red onion, sliced
1-2 bunches green onions
1 pound strawberries, sliced
1/2 - 1 pound of bacon, fried crispy and crumbled
1/2 c. slivered almonds
3 T sugar

Place almonds and sugar in small pan and cook over low heat, stirring constantly until sugar begins to melt. Continue stirring and coating almonds until sugar is completely melted and almonds are completely caramelised. Remove from heat, pour almonds onto a cutting board and separate.

Toss together lettuce, spinach, mushrooms, onions and bacon. Cover with strawberries, almonds and swiss cheese.

Dressing:
3/4 T. poppy seeds
1/3 c. raspberry vinegar
3/4 c. oil
1/3 c. strawberry jam
1/4 c. grated onion (optional)

Mix all together and serve with salad.

Chicken & Broccoli Bake

This recipe is my kids' all time favorite. They would eat this every night. (Even if I left out the chicken!)

What you'll need:
4 chicken breast halves
2 pounds fresh broccoli, Cut up and cooked (I like to steam mine)
1 can cream of chicken soup
1/2 c. milk
1/2 c. sour cream (can sub. mayo)
1. c grated cheese
1 T lemon juice
1/2 c. bread crumbs

Simmer chicken breast in water about 30 minutes. Chop into small pieces. Arrange broccoli in the bottom of a 9x13 pan. layer chicken over broccoli. Mix remaining ingredients except for bread crumbs and spread to cover entire pan. Bake at 350* for 30-45 minutes. Sprinkle top with bread crumbs and serve.

Homemade Krispy Kreme Donuts


Donuts:
2 T. Yeast
1/4 c. warm water
1 1/2 c. lukewarm milk
1/2 c. sugar
1 t. salt
2 eggs
1/3 c. shortening
5 c. flour

Pour yeast into warm water and let stand for 5 minutes or until bubbly. In a large bowl mix together yeast mixture, milk, sugar, salt, eggs , shortening and 2 cups of the flour. Mix for 2 minutes on low speed or with a wooden spoon. Beat in remaining flour 1/2 cup at a time until dough is no longer sticky. Knead for 5 minutes or so until dough is smooth. Put dough into a greased bowl and cover. Let rise until double. Turn dough onto a floured surface and roll out into about 1/2" thickness. Cut out with a donut cutter or a large glass and small round cookie cutter for the center. Cover donuts lightly with a thin towel and let rise again until double.

Glaze:
2/3 c. butter
4 c. powdered sugar
4 t. vanilla
8 T hot water

In the mean time melt butter in a saucepan over medium heat. Stir in powdered sugar and vanilla until smooth. Remove from heat and stir water in a little bit at a time until icing has thinned out some. Set aside.

Frying:
Heat oil to 350*. Slide donuts into the hot oil using tongs. Turn donuts over as they brown. Cook on each side until golden brown. Remove to wire rack or paper towels to drain. While still hot, dip donuts into glaze and set onto wire racks to drain. (I put the wire racks onto a cookie sheet so that I can reuse the glaze that drips off.

Variation:
Melt some chocolate chips into the glaze for chocolate glazed donuts.

French Silk Pie

This pie is amazing!

Crust:
1 c. flour
2 T. sugar
1/2 cup butter, softened

Mix together sugar and flour. Cut in softened butter with pastry cutter, two knives or a fork. Gather all together into a ball. Spray a pie pan. Spread dough out into pie pan using your hands. Bake at 375* for 12-15 minutes. Set aside to cool.

Pie Filling:
1 c. semi sweet or milk choc. chocolate chips
1 7oz marshmallow creme
1/4 c. butter
1 1/4 c. heavy whipping cream, whipped

Mix all EXCEPT whipped cream together in a sauce pan over low heat. Stir occasionally until all is melted and mixture is smooth. Let cool. Fold in whipped cream.

Topping:
1 c. heavy whipping cream
3 T. powdered sugar
1 t. vanilla (optional)
Chocolate shavings (optional)

Mix whipping cream,powdered sugar and vanilla together using electric mixer until stiff peaks for. Spread over pie. Top with chocolate shavings. Chill in refrigerator for at least 3 hours.

Banana Chocolate Chip Muffins (or Bread)

1 c. mashed bananas
1/2 c. applesauce
1/2 c. sour cream
3/4 c. sugar
2 c. flour
2 t. baking soda
1/2 t. salt
chocolate chips (as desired)

Cream applesauce, sour cream, and sugar. Add bananas. Mix dry ingredients and add to banana mixture. Stir in choc chips. Bake at 350* in muffin tins 20-25 minutes. (as 2 loaves of bread bake 45-60 minutes.

Zucchini Option:
Add 1/2 c. - 1 c. shredded zucchini to mixture. It is best to add this in just after the bananas.

You can also substitute the bananas for zucchini completely.

Banana Oatmeal Chocolate Chip Cookies

What you'll need:
3/4 c. shortening
1 c. butter
1 1/2 c. flour
1/2 t. baking soda
1 egg
1 t. salt
1 3/4 c. oats (If you don't like the texture of oatmeal cookies you can grind these in a blender)
1 c. mashed banana
1 t. almond extract
1 pkg. chocolate chips (I like to use milk chocolate)

Cream shortening, butter and sugar together. Add egg and almond extract, mix well. Add mashed banana and mix. Mix flour, baking soda and spices in another bowl. Add dry ingredients to wet ingredients and mix well. Add remaining ingredients one at a time mixing well in between. Drop by rounded teaspoon onto foil covered cookie sheet 1 1/2 inches apart. Bake at 400* 12-15 minutes.

Teriyaki Chicken

1 lb chicken
Sauce:
1 T. corn starch
1 T. cold water
1/2 c. sugar
1/2 c. soy sauce
1/4 c. cider vinegar
1 clove garlic, minced
1/2 t. ginger
1/4 t. pepper

Mix all ingredients in a sauce pan. Cook on low til thickened. Line cookie sheet with foil. Cut chicken into desired sizes and baste both sides with sauce. Bake at 400* 30 minutes basting chicken on both sides every 10 minutes.

BBQ Sauce

I got this recipe from Emily and added some seasonings that we like at our house.

What you'll need:
1 c. water (I sometimes don't use much or any depending on how juicy the meat is that I am adding it to.)
1/3 c. cider vinegar
1 c. ketchup
1/3 c. Worcestershire sauce
1 T. hot pepper sauce (Tabasco, etc.)
1/2 c. brown sugar
1/8 t. salt
1 t. onion powder
1 t. garlic powder
1/2 t. pepper

Mix all ingredients in a sauce pan and simmer one hour.

(I like to add all ingredients to some crockpot chicken, beef or pork and do pulled pork sandwiches and such. When adding it to a meat I place the meat in the crockpot, add all ingredients to the crockpot and let cook. Shred meat when it is tender.)

Preschool Graduation Cupcakes

I made these silly little graduation cupcakes for the boys' preschool graduation last weekend. They are easy, but VERY time consuming. Each one is different. This is one I probably won't be doing again. At least not any time soon. They were a HUGE hit at the party though.


Pumpkin Pancakes

What you'll need:
2 c. flour
3 T. Brown sugar
2 t. baking powder
1 t. baking soda
1 t. allspice
1 t. cinnamon
1/4 t. nutmeg
1/4 t. cloves
1 1/2 c. milk
1 egg
1 c. pumpkin
2 T. applesauce
2 T. vinegar

Mix all wet ingredients in large bowl. Mix all dry ingredients in a separate bowl. Add dry ingredients to wet ingredients. Mix. Cook on hot griddle in desired sizes. Serve with Apple Syrup.

Mexican Pasta Salad

What you'll need:
1 box rotini pasta , cooked
1 avocado
1/2 - 1 container cherry or grape tomatoes
1 lb cheddar cheese, grated
1 bunch green onions, scliced
1 can sliced olives, drained
1 can kidney beans, drained and rinsed
1 can diced green chilies (optional) I don't use these

Dressing:
2 packets buttermilk ranch
1 packet taco seasoning
1 1/2 c. mayo
1 1/2 c. buttermilk
1/2 bunch cilantro, chopped
2 limes

Mix all salad ingredients. For dressing: Mix ranch packets, mayo and buttermilk. Mix well. Add taco packet. Mix well. Squeeze in limes, add cilantro. Mix well. Pour over salad and toss.

Crockpot White Chicken Chili

What you'll need:
2 cans white beans
1 can butter beans
2 lbs boneless skinless chicken breast
3 c. half & half
1 t. Tabasco
2 cans green diced chilies
3/4 c. chicken broth
1 onion, chopped
1 - 1 1/2 t. chili powder
1 - 1 1/2 t. cumin
1 t. salt
1 t. pepper
1 t. onion powder
1 t. garlic powder
1-2 t. Accent

Place chicken in crockpot and season with salt and pepper. Cook on high 2 hours. Shred chicken and add all other ingredients. Cook on low 3-4 hours longer. Thicken with flour/water mixture. Serve with sour cream and cheese.

Veggie Pasta Salad

What you'll need:
1 package angel hair pasta (cooked)
1/2 bottle vegetable supreme (in the spice section of the grocery store)
2 cucumbers
2 tomatoes
2 avocados

Dressing:
1 package Italian Dressing Season (Good Season brand)
Red wine vinegar
(Mix as directed substituting red wine vinegar for regular vinegar)

Mix pasta and vegetable supreme and let sit overnight in the fridge. Arrange pasta on a serving tray. Slice vegetables over the top pf the pasta. Pour dressing over the top of the salad and serve.

Bread Sticks

It seems like I get asked for this recipe all of the time so it seems right to start with this one.

Mix together:
2 1/2 c. warm water
1 T. sugar
1 T. yeast
2 T. margarine
Let sit until bubbly.

Next add 2 cups flour and 1 t. salt and mix well. Mix/knead in 3-4 more cups of flour until no longer sticky.

Shape into bread sticks or spread dough onto a greased jelly roll pan and cut with a pizza cutter to make bread sticks. Brush dough with butter (I like to use a butter spray) and sprinkle with garlic salt. (You can also sprinkle Parmesan cheese on the dough if you like.)

Let rise up to 30 minutes. (You do not have to let these rise at all if you are happy with the size. I usually put them straight into the oven at this point.)

Bake at 400* for 10 minutes. Remove from oven and brush or spray with butter again and then bake at 425* for 5 minutes longer or until tops are starting to brown.

Remove from pan immediately and serve. I like to serve this with Alfredo sauce for dipping. You can also serve with marinara or just by themselves.

The Story

I decided to start a blog for my recipes. I figure this is a good way to keep track of them. It seems like I finally get one I really like and then I can never find it again. Now with the blog to book options I can keep this going and just print them into books. I also love that I can post pictures of my adventures here too! And for everyone who asks me for my recipe, I can just send them here instead of writing it all down...Again! Love it. Why did I not think of this sooner??
